I am so so excited to be sharing one of my all time favorite recipes with you today!  If you know me personally you know that I have a strong love for making (and eating of course) bruschetta that I don’t quite have towards anything else. Bruschetta is my go to dish, it is perfect to make for nicer occasions, but also simple enough to make as an afternoon snack.

For Bruschetta

  • 4 diced medium sized tomatoes
  • ¼ cup olive oil
  • ½ teaspoon + a few pinches salt
  • ¼ teaspoon pepper
  • 3 to 4 garlic gloves, minced
  • ¼ teaspoon oregano
  • 1 loaf unsliced French bread
  • 4 tablespoons chopped fresh basil for topping

For Bread 

  • ½ cup olive oil
  • ¼ teaspoon oregano


  1. In a large bowl, mix together your tomatoes, oil, salt and pepper and garlic. Toss Gently. Place to the side.Processed with VSCOcam with hb1 preset
  2. Mix together your olive oil and oregano for the bread in a separate bowl and place to the side.
  3. Now cut your loaf into 24 slices and brush on the olive oil/oregano mixture onto both sides of the bread slices.Processed with VSCOcam with a5 preset
  4. Lightly toast on the stove making sure the bread doesn’t become too over done.
  5. Place your slices on your plate and spoon the tomato mixture onto each slice.
  6. Garnish with basil. You can also sprinkle red crushed pepper or Parmesan cheese if you prefer.
